Some of the complex sugars in mushrooms are called alpha and beta glucans and are the focus of studies concerning their effect on the human immune system. Beta glucans are not produced naturally in our bodies they must come from plant and animal sources. That’s where these individual species come in. Additionally, activated macrophage cells release cytokines that initiate a cascade of immunity-related functions, some stimulating the formation of white blood cells, others sending messages to B and T cells that prompt the adaptive immune response, and others regulating the inflammatory response.
